Things are a little crazy at my house right now. We are getting ready to get new kitchen appliances! I probably haven’t been this excited to get something in a very long time. Ah, being an adult is glorious. There is some serious prep work that is going down and of course we’re doing it all ourselves. I mean, Danny is doing it and I am just … helping. So, before he ripped out my old oven, I wanted to bake one more thing before we go to crockpot meals for the rest of the week. This Buffalo Chicken Pasta did not disappoint!
Buffalo Chicken Pasta
Prep time: 10 minutes
Cook time: 20 minutes
- 8 ounces of penne pasta
- 8 ounce package of cream cheese, softened
- ¾ cup of ranch dressing
- 1/3 cup of hot sauce (I use Franks)
- 2 cups of shredded chicken, cooked
- 1 cup of shredded mozzarella cheese
- ½ cup of shredded cheddar cheese
- Green onions, for garnish (optional)
Preheat the oven to 350 degrees.
Spray an 8-inch casserole dish with nonstick spray.
Cook the pasta according to the package directions.
Stir together the cream cheese, ranch and hot sauce until creamy.
Add the chicken and the cooked pasta. Stir to combine. Spoon the mixture into your dish.
Combine the two cheeses and sprinkle them on top.
Bake for 18 minutes, and then broil on high for 2 minutes to brown the cheese.
Garnish with green onions, hot sauce and more ranch if you’d like!
